Tofu and Vegetables Stir Fry

Of late I've been trying to make really easy recipes to make my life a bit easier J .My previous recipe was a quick no cook/bake dessert and this time I've followed that up with an easy Tofu dish that makes for a great weeknight meal with noodles or rice.

Tofu is very delicate and tends to break-up many-a-times, but if you brown it in a little bit of oil, it holds it shape much better in my opinion.I also buy extra firm tofu for my stir fries and squeeze out all the water before working with it.

The sauce that I've made here is extremely easy with the main ingredient being this Chilli Garlic sauce that I picked up at a Korean Store. I've made the same recipe with chicken strips for a different variation and it came out delicious.You could use it for any stir fry for that spicy garlicky heat!

It has just the perfect amount of heat and spice and its very similar to the Indo Chinese preparations served in Indian restaurants without any effort literally.My kids also love it as much as we do and I make it all the time!It could easily pass off as one of my best Tofu dishes J

Soba noodles has made its way into my favorite food items list!What is Soba, you might ask?Its a Japanese noodles made with buckwheat flour.Its roughly as thick as Spaghetti and has a nutty taste.Its high in Vitamin B1, B2, minerals and protein!It has huge health benefits not limited to decreasing cholesterol, lowering blood pressure, reducing fat accumulation amongst others.{Source-health hokkaido}

I love the fact that's its a quick cooking noodles [takes about 4-5 minutes to cook] and this dish is very easy to put together.Ideal for busy nights or days when you're looking to cook-up something fast! I'm very excited to bring my dish to our #Sunday Supper this Memorial Day Weekend!If you thought the noodles itself was healthy, my addition of Swiss Chard and Mushrooms make it even more healthier and give it so much flavor and a dark color, that makes for a nutrition packed supper for the whole family.

The garlic, ginger and chilli flakes spice up the noodles and the combination of Soy,Oyster and lemon juice flavors the whole dish.You can add your favorite meat or seafood for a Non-Vegetarian version.Its a meal that's well balanced, wholesome and delicious!

Rice Noodles with Chicken and Mushrooms

Happy New Year!I was out of town for Christmas and New Year's eve and had a great time vacationing with family!Hope you all had a great time as well.The amount of food we eat during the holidays is just unbelievable!The midriff keeps expanding and when its all over, that's when you start thinking of how to get rid of those extra pounds or kilos that you've gained during this period.Time to start eating healthy and time to start exercising, getting back into shape.

Kicking off 2012, I have a great recipe, quite healthy and delicious, quick and easy at the same time!My family loves Chinese food and since I haven't added any Chinese recipes here yet, I thought now would be a good time to do so.This recipe is inspired by the numerous noodle dishes from the Chinese restaurants in China Town in London's West End that we frequented on a regular basis.

I use Yellow Peppers, Baby Bella or portobella mushrooms and boneless chicken thighs.The use of Oyster Sauce and Soy Sauce is very common in Chinese dishes and they impart the savory flavor to the dish.You can make it spicy or non-spicy according to your preference.
